We produce the wine entirely by hand, from the grape harvest to the destemming, berry by berry.We ferment in open tuns of French oak.
Subsequently, we let it rest in French oak barrels, where it seeks a fine and subtle contribution from the wood, for a specific period of 14 months, during which the wine's mineral traits settle to achieve rich subtlety and elegance.
Finally, bottle aging will be a fundamental part of the production, since all the richness this vineyard offers requires a varying period in bottle that completes and rounds out all its excellent qualities.
